Quick and healthy comfort food to usher in the summer

The summer is starting to kick in, and we are rapidly approaching our final days on Hawk Hill before we take a hiatus (in my case, and for the rest of the senior class, a relatively permanent hiatus) from pencils, books, and yes, teachers' dirty looks.
That also means we're probably scrounging up the last of our declining balance dollars, and are really sick of the same old cafeteria food, Larry's late night runs, and all other exhausted options. It's no secret by now that I'm an enemy of additives and preservatives, as well as food that just doesn't taste or feel good.
Nevertheless, sometimes it is simply impossible to cook for ourselves. Whether it's due to pure laziness (also known as senioritis), lack of time, or in the case of most freshmen, lack of facilities, cooking just isn't always the most convenient solution. For times you truly have to be on the go, or just cannot muster up the effort, I leave you with some recipes that can be made right in your own microwave-no fancy equipment necessary. Inspired by my boyfriend who has no kitchen and no time, this week is an ode to all of you who refuse to cook. These recipes provide some nutritionally enhanced versions of your favorite comfort foods that are sure to get you through the end of school and finals week.

Long Line Not Necessary Quesadillas
1 Wheat (Yes, use wheat. Trust me!) Tortilla
1 String Mozzarella Cheese
(Optional) 1 Snack sized Cheddar Cheese (I prefer white simply because it has less coloring additives)
ΒΌ bag of Salad Mix of your choice
Shred or chop up the cheese and place it in the center of your wheat tortilla. Lay flat on a plate and microwave for about 20 to 30 seconds. Fold immediately in half, and then in half again so that it has been folded to a quarter of the size it was originally. Serve a mixed salad on the side to get some greens in. You can alter this recipe by adding in chopped mushrooms, tomatoes, spinach, lettuce, pre-roasted chicken (for those of you willing to cook a little), or whatever you like to add to your quesadillas.
